Radio Silence Broken

Forgive me, dear readers, as I have been most inattentive this year. It's been a time of healing, which rightfully should have included blog posts as part of that healing, but it seems as though my procrastination genes have been kicked into overdrive ...

Forgive me also for the fact that this is not a "real" blog post, but rather a shameless plug for my dear friend, Phoebe (she of "Herding Cats" fame), who has been nominated as one of the best blogs of 2013 over on babble.com

Adventures in Baking

Cooking blogs are a dime a dozen- easy to find. I don't feel this is a bad thing, but there are plenty of them out there.

There are many reasons why I didn't start a cooking blog- although the statement above isn't really one of them.

Probably my primary reason for not doing a cooking/baking blog is because so many others do it better than I ever could; I've already mentioned Shauna's blog at gluten free girl. If you didn't check it out before (see lazy blogging, PTIII), you really ought to - there are recipes and tips there that have nothing to do with a gluten free diet, they're just plain helpful (such as yesterday's post about an easy way to peel garlic).



Another reason would be that the most honest name I could come up with for such a blog would likely be very unappealing to most people. You see, truth-in-advertising would require me to call it something like "The Bad Baker" or "Misbehaving in the kitchen".



Because, after all, I am notoriously bad at following recipes. I don't know why, but I almost always want to tweak things, just a little. Today was no exception.

A request went out, earlier this week, for parents to send in baking and/or other treats for Staff Appreciation Day, which is today.  I could go on about the amazing people that work at Boo's school, but really, that deserves its own post.

Suffice to say, when I received the E-mail, I was all over the idea. Except, you know, I kind of forgot I was going to be out all evening yesterday, which meant I had to do my baking this morning.

In case I have not mentioned it before, I am NOT a morning person, so this could prove entertaining ...

Anyhow, I was asked to contribute muffins, and I have a lot of granny smith apples at the moment, so I decided I would make apple cinnamon muffins (gluten free, of course, but that's a given in this household).

Couldn't find my favourite cookbooks this morning. See above about not being a morning person ...

I did a consult with the Great God Google, and came across a very simple, straightforward recipe: gluten free apple cinnamon muffins. Super simple, few ingredients, no fuss, no muss.

For reasons I cannot quite explain, I played with it a little ... I started out by doubling the recipe (5 kids=I usually end up doubling most recipes).

Then, I changed the flours. The recipe calls for rice flour, but I find it tends to be quite grainy in texture, so I borrowed a trick I learned from Shauna, and did a blend of equal parts of: sweet rice, tapioca & potato starch flour.

The recipe also calls for grated apple, but that sounded messy. Instead I cut the apples into wedges and then into smaller chunks- I'm all about saving time on clean-up.

I tossed the apple pieces in the cinnamon, rather than mixing them in separately, if that matters to anyone.

They turned out really well, for the record, and since they were so quick and easy to put together, I made more for at home.




Good thing I did, because none of the ones Boo took to school made it back home ... :-P

I said I was going to share four blogs I enjoy this week, and it took me a while to get the last one up (life is what happens when you're busy making other plans, right?).

Anyhow, the fourth blog I really enjoy reading is another extremely popular blog. This blog may not change the world with deep political insight, but she just might do so with laughter.

Amber is the author of "Crappy Pictures". It is, quite simply, a peek at the day-to-day life of a blogging goddess and her two small children- illustrated, with crappy pictures. Take a peek, you won't regret it!

Lazyblogging, PTIII

Years ago, I discovered I cannot tolerate gluten.

Naturally,I cut gluten out of my diet- in fact, we cut it out of our household (Himself and the Minions of Chaos® can all still eat gluten, but we had problems with me getting extremely ill from cross-contamination, and it rather scared Himself how quickly I became quite badly off). It was challenging, but not because I was mourning the loss of bread- the challenge was in finding good information about going and living gluten-free.

Initially, I found a book called "The Gluten-Free Gourmet". For someone who is feeling lost and doesn't know where to turn, this book is, quite honestly, very helpful. It gave me some basic recipes that we could use that made the transition a little easier. At least the Minions could still have pancakes, and we found a decent pizza crust recipe in there, too (which was good, because the pre-made gf crusts and even the mixes were either really small, or really pricey, or both).

The book also contained some decent information about foods that were safe and foods to be avoided, too. It even touched on additives of which I had to be wary.

But honestly, it wasn't quite what I was looking for at the time. In a household of 7 people, a (large) dog and two cats, buying expensive substitutes for gluten-containing foods is a budget-blowing proposition. I was OK with using some, of course, but wanted to make changes to the way we ate, rather than merely substituting. I didn't know the term for it at the time, but I was wanting to take more of a Whole Foods approach.

This was where Bette's book, as helpful as it was, failed me. It is simply about making GF versions of all the things you used to eat, from bread, to cake, to soups and stews ... things that still use flour and such, only now made with gluten-free flours.

Yes, plural. That's the tricky part about gluten-free baking; no one flour is a perfect substitute for wheat flour, so various flours are combined in ratios to achieve a similar consistency to that of the wheat flour-containing products.

So I found myself searching on-line (as nearly everybody does these days!), and I came across today's featured blog.

Right from the start, I could see that this site was something different. Shauna, the site owner, took a very different approach to living gluten-free than *any* other site or book I had so far found. This alone was enough to interest me. She had a link on her site to amazon, where one could purchase her book. A week or two later, I found a copy of her book in a local bookshop, and without hesitation, bought it.

Seriously. There are recipes in there that have nothing to do with substitution. But it's not just recipes; it's written like a novel. Shauna shares her journey through illness, diagnosis and recovery- she shares much more than that, though, she shares her passion for food, and even the story of how she met her husband (referred to as "The Chef").

It's a beautiful story, with amazing food thrown in for good measure. If that's not enough to make you want to buy the book for yourself, why not check it out from your local library? If nothing else, you really need to try the Roast Chicken wtih Lemon and Rosemary ...

Excuse me while I take a moment to name drop, and brag about my totally awesome friend

This is another post about someone else's blog. Let's call it what it is; "Lazyblogging".

But it's more than that- I intend to share with you my top four favourite blogs this week.

Today's topical blog is, in all honesty, probably my absolute favourite, because its creator is a dear friend; we've been friends for 11 years.

Let me tell you a bit about her- she is the mother of four children, two boys and two girls. She is American-born and raised, and is currently living in Dublin, Eire (which, incidentally, is my father's hometown, so I'm mad jealous of her).

When we first met, Phoebe had three of her four children. her daughter (then the baby of the family) was just shy of her first birthday. My Squeaky Boy was 15 months.

The two "babies" (toddlers?!) hit it off immediately- quite literally, in fact: Miss Mim would punch Squeak in the arm, and then, while he was distracted, steal food from his plate. Phoebe joked that perhaps someday they might marry, a joke that we still make reference to today ("How's my future son-in-law?").

Phoebe and I have many bizarre things in common- including, but not limited to, a rather twisted sense of humour. We often, along with another mutual friend, have such eerily similar thoughts on things it's rather like we share a brain. It's creepy and funny, all at the same time.

We have similar tastes in music, too. In fact, one of the bands I introduced her to has become a favourite for her entire family, especially their youngest daughter, the dynamic and dazzling Miss Maura. The band is Great Big Sea, and every time I hear "Ordinary Day", I think of Phoebe and Maura.

Phoebe is a writer, and has been keeping a blog for a few years now. Recently, she posted about "The R word", a post that has since gone viral (having been tweeted and re-tweeted by celebrities such as Pink). Keep in mind, she didn't post about this because she wanted to be the next Internet Sensation. She wrote about what was on her mind, some of us shared it, and it went viral because *she* is very cool. Not just cool, Steve Buscemi Cool.

So, do check out her blog- not just for the post that was seen around the world- stop in, sit down, and share a laugh at the exploits of her amazing and wonderful family ...
